Gluten Free Pork and Apple Tacos

This recipe brings the classic pork and apple combination into a delicious taco. Yummy chipotle pork with an apple salsa and guacamole all wrapped up in my easy gluten free soft taco shells.

Ingredients

-For the meat
  • 1½tbsp All purpose seasoning
  • ¼tsp Ground cumin
  • 1tsp Honey
  • Juice and zest of half a lime
  • 1tsp Dried oregano
  • 1tbsp Chipotle paste
  • 1 Onion, cut into strips
  • 2 Pork loin steaks, cut into chunks
  • Salt and pepper to taste
-For the guacamole
  • 1 Avocado
  • ½ of a large shallot, finely diced
  • 1tbsp Red bell pepper, finely diced
  • 1tbsp Cherry tomatoes, finely diced
  • ½ Mild red chilli
  • ½tsp Garlic powder
  • Zest and juice of half a lime
  • Handful of fresh coriander, chopped
-For the salsa
  • 1 Granny smith apple, pealed and finely diced
  • Handful of cherry tomatoes finely diced
  • Zest and juice of half a lime
  • Handful of fresh coriander, chopped
  • 1tsp honey
-For the taco
  • Soft taco shells (store bought or homemade)
  • Cholula hot sauce
  • Pink pickled onions (optional)
  • Fresh coriander

Method

  1. In a bowl combine the all purpose seasoning, cumin, oregano and pork loin chunks. Cover and leave in fridge for 1-6 hours to marinate.
  2. Meanwhile prepare the guacamole. Mash an avocado into a bowl; to this add all of the other guacamole ingredients along with some salt and pepper. Mix well and set aside.
  3. Prepare the salsa by combining all of the salsa ingredients along with some salt and pepper to taste.
  4. Now that the meat has marinated it’s time to cook. Heat some oil in a frying pan over high heat. Add in the onions and a pinch of salt. Once the onions have begun to turn translucent, add your pork, honey, chipotle paste, lime juice and lime zest. Fry for 3-5 minutes.
  5. Now it is time to assemble the tacos. Place a dollop of the guacamole on each taco and spread slightly. Top this with a few pieces of the pork and a then a spoonful of the salsa.
  6. Finish with a few drops of cholula hot sauce, some fresh coriander and some pink pickled onions.

About This Recipe

This recipe is a twist on the classic tacos al pastor. It brings the classic pork and apple combination into delicious tacos al pastor by replacing the traditional pineapple with apple. It is yummy chipotle pork with an apple salsa and guacamole all wrapped up in my easy gluten free soft taco shells. They are far from boring, and the apple works amazingly well with all of the spicy elements and brings a nice sweet crunch.

To mix this up you could even make this dish for a barbeque! If you prepare all of the toppings and marinate the meat in advance, you could cook the meat on the barbeque and then assemble! This would give an extra smoky flavour elevating the chipotle flavour.

This meal is great to serve family style, letting everyone build their own tacos. It is also a great party food, as tacos al pastor are traditionally a Mexican street food. FAQs

Question: Can I prepare everything a day in advance?

  • You can marinate the meat, make the salsa, and make the taco shells in advance; however, I would avoid making the guacamole too far in advance. Try to make the guacamole as close to when you will be eating these as possible because avocado can easily oxidise and go brown, even with the lime.

Question: How many tacos per person?

  • If they are the normal small taco size, I would suggest 4-5 per person. This recipe makes enough for 10 tacos, so roughly 2/2.5 people.
